Keto Lemon Shortcrust Slice

This slice has a buttery almond crust or coco nutty if dairy free desired.
With a zesty lemon filing this slice is always a winner!

Ingredients for 12 Servings

crust

  • 2 cups

    almond flour

  • 1/2 cup

    erythritol

  • 1/4 tsp

    salt

  • 100 gr

    butter (can use coconut oil if wanting dairy free)

lemon filling

  • 5

    large eggs

  • 1/4 cup

    erythritol or less according to taste

  • 50 gr

    butter melted

  • 2

    lemons, juice and zest

  • 1 tsp

    vanilla extract

  • 3/4 cup

    almond flour

Method

crust

  1. Preheat oven to 180C

  2. Grease and line with baking paper  a 28 x 18 cm slice tin and set aside

  3. Mix dry ingredients together

  4. Melt butter or coconut equivalent in the microwave 

  5. Add to a bowl of melted butter/coconut , mix by hand until it forms a dough ball

  6. A food processor can be used but I don't like washing it up!

  7. Press evenly into bottom of the slice tin using the back of a spoon

  8. Bake in the middle of the oven for 15 mins. As it bakes prepare the lemon filling.

  1. In the same bowl used for making dough (less washing up)

  2. Add all the ingredients listed and mix with stick mixer

  3. Pour mixture over pre-baked crust and bake for a further 20 minutes, filling should be set but still soft.
  4. Let cool and put in the fridge for at least 2 hours before cutting.

  5. Cut into squares and sift powdered erythritol over the top for a nice finish.

  6. Can be served by itself or a dollop of cream and berries.

  7. If cut into 12 has 2 grams carb a serve
